Healthy Beet Soup
After a season of feasting, it’s time for some self care. Soup is often a good way to stay warm and to undo some of our excesses. This delicious beet soup recipe from Kristina Smodila comes directly from Slovenia…where they know their way around a beet and a bowl of soup!
Ingredients
(for 6-8 portions)
1 onion
2 garlic cloves
2 tbsp oil
3-4 cups fresh beetroot
2 medium potatoes
1 qt vegetable soup stock
4 T parmesan
1/2 tsp salt
Garnish (per portion)
1 tbsp crème fraiche
Pinch of black sesame and fresh herbs to garnish
Preparation
Peel and cut onion and garlic.
Peel, wash and dice beets and potatoes.
Preheat oil in a bigger pot. Add onion and fry until golden.
Add garlic and mix with cooking spoon for a few seconds.
Add beets and potatoes and fry for a minute, constantly mixing with cooking spoon.
Add soup stock, parmesan and salt. Cook over medium flame for about 30 minutes.
Use blender to achieve smooth, silky texture.
Serve warm with a spoon of crème fraiche or sour cream.
Garnish with black sesame and fresh herbs.
