Strawberry Parfait

This upcoming school year is bound to be a bit chaotic. With learning online and the kids at home, parents may be wondering how they’ll handle it all. To help, Chef Sarah Lujetic has created a fresh batch of delicious “unboxed” lunch recipes for at-home afternoon meals and snacks to satisfy your kids’ cravings and make meal time fun.

Though school will soon be in session, many kids will still be attending classes virtually from home, which means the dining room will soon be their new study hall, and the kitchen the cafeteria. Before, boxed or brown paper bag lunches were necessary. Now, we’re looking for new ways to make break time fun while still keeping things as fuss-free as possible.

Sarah Lujetic is a personal chef, caterer, and parent who knows all too well the struggle of trying to feed a child with very particular taste buds. ”I’m going through what every parent is going through,” she says. “I’m trying to show things that as a parent I’ve used, so I have the experience to back it up.”

When it comes to lunch time, Sarah says to keep it easy, go with what’s in your refrigerator, and to not feel bad about using something that’s jarred to make your life easier. ”There’s no judgement. I am someone who wants to help people enjoy cooking, provide for their families, and still keep their sanity.”

For starters, she recommends these strawberry parfaits as an easy grab-and-go snack to take the stress out of mid day meals. Colorful, playful, and nothing mysterious or hard to find. Build a handful— jam, granola, greek yogurt, fresh fruit, repeat— wrap them up to put in the fridge, and bring them out for lunch or a snack throughout the week.

Strawberry Parfait

Ingredients

Organic fructose free strawberry jam

Plain whole milk greek yogurt

Granola chocolate and coconut

Small diced fresh strawberries

Tools

Glass cups, jars

Spoon

Knife

Cutting board

 

Instructions

On bottom of jar add one big scoop of jam. Flatten and spread with spoon.

Add layer of granola. If you start with coconut granola use the chocolate for next layer.

Add fresh diced strawberries, then yogurt. Repeat with granola, yogurt, and fresh fruit. The jam is only bottom layer.
