The Five O'Clock: Mr. Tom Collins
The Tom Collins is a wonderful warm weather refresher — a version of spiked lemonade without the overbearing sugar. The botanicals of juniper, coriander and citrus add complexity to this perfect summer sipper.
If you’re in love Tom Collins and want to dress him up for a party, try the very classy French 75.
Ingredients
2 parts gin
1 part simple syrup
3/4 parts fresh squeezed lemon juice
Maraschino Cherry (optional)
Instructions
Fill a tall glass with ice to chill it, and set aside. Before you juice the lemon, cut a slick out of the center for garnish.
Combine lemon juice, simple syrup and gin in a shaker and shake for about 30 seconds until cold and combined. Pour into the tall, ice-filled glass and top off with soda water. Garnish with lemon slice and cherry.
