Get Dressed!
We’re stressed. The desserts are calling out to us…BUT SALAD IS A GOOD IDEA! Let’s fuel ourselves with good foods that keep mind and body in tiptop condition for closet cleaning, kitchen and garage reorganization, board games, and all our at-home activities.
Blueberry Chia Dressing
1 c Blueberries
1/4 c Fresh lemon juice
1 T White balsamic or apple cider vinegar
1/4 c Olive oil
1 T Honey
1/4 t Mild ground chile
1/8 t Ground cumin
Salt and pepper to taste
1 T Chia seeds
Purée blueberries, lemon juice, olive oil, honey, chile, cumin and honey
Add chia seeds before serving
Yogurt vinaigrette
1/2 c Plain 5% fat Greek yogurt
1/4 c Olive oil
1/4 c Dijon mustard
1 T Honey
2 T Lemon juice
2 T Apple cider vinegar
1 Clove garlic, finely chopped
2 t Fresh jalapeño, finely chopped
½ t Salt
1 t Black pepper
Whisk together yogurt, oil, mustard, honey, lemon juice, vinegar, salt and pepper
Stir in garlic and jalapeno and let rest for 1 hour
Whisk again before serving
Ginger Dressing
½ c Grapeseed oil
2 T Apple cider vinegar
2 T Dijon mustard
1 T Maple syrup
2 t Fresh ginger, finely grated
½ t Salt
½ t Pepper
Whisk together all ingredients except ginger
Add ginger
Store in non-reactive container overnight
Whisk again before serving
Add chia seeds before serving
