Jen Urich of Farmer + Baker shares a delicious and healthy beet and goat cheese spread which pairs happily with the crunch of her homemade crackers. The vibrant pink and fresh flavor are perfect for a Friday happy hour.
Along with a shot of vodka because….FRIDAY!
Beet Goat Cheese Spread
-2 cups roasted beets (peeled)
-2 cups sheeps milk feta
-Splash of heavy cream (optional)
-Local honey
Combine beets and cheese in blender. Add cream to thin, if necessary. Sweeten with honey to taste. Dust with freshly cracked black pepper and a sprinkle of sea salt.
Crackers
-3 cups pastry flour
-1 cup cold water
-1 tsp salt
-1 tsp sugar
-4 tbsp olive oil
Combine all ingredients. Roll dough as thin as possible. Bake on parchment paper-covered baking trays at 400 degrees for 8-10 minutes. Break or cut to desired size.
